Meredith's Mozzarella Stuffed Meatloaf

Recipe from : Meredith (a Pinterest recipe with personal flair)
Serves: 6-8
ingredients:
1 lb. ground beef    Sauce:
1 med. onion, finely chopped    1 tsp. mustard
1/2 small bell pepper, finely chopped    1/2 cup ketchup or BBQ sauce ( I use a little more)
1 handful fresh parsley (or 1 tsp. dried), chopped    1 Tbsp. Worcestershire Sauce
1/2 tsp. salt
1 tsp paprika
2 tsp. Italian seasoning
4 Tbsp. bread crumbs
1 large egg
4 oz. mozzarella cheese, diced(I use string cheese)

Prep: Line a rimmed sheet pan with foil and lightly grease it. Preheat oven to 350°

Make the meatloaf mix: In a small bowl, prepare the sauce by combining the mustard, paprika, Worcestershire Sauce and ketchup/BBQ sauce.
Place all remaining ingredients for the meatloaf in a large mixing bowl, including approximately 1/3 of the "sauce" ( I use more), and combine well.

Shape: Shape meat into a loaf on the prepared pan. Create a deep crease down the middle and fill with the mozzarella cheese. Tightly pinch the meat together on top to close over the cheese.

Bake: Spread the entire loaf with an additional 1/3 sauce on top. Bake for 30 min. Remove and spread remaining sauce over the top and then bake an additional 20-30 minutes, or until it has reached an internal temperature of 160°.

Remove: from oven and let rest for 10 minutes before serving
